Do you remember or Mac and Cheese Takedown last month? A few of our Journey Crew members created yummy Mac and Cheese dishes and we chose our favorite – Joe Garay’s Jalapeno Mac & Cheese. Many of you asked for it, now it’s yours to try too!
Joe’s Jolly Jalapeno Bacon Man N Cheese
- 1/2 cup unsalted butter
- 1/2 cup all purpose flour
- 4 cups of whole milk
- 2 1/2 cups of White Cheddar Cheese
- 1 1/2 cup of Monterey Jack cheese
- Corse salt & Black Pepper to taste
In saucepan mix together melted butter and flour until all flour lumps are gone. Add milk a little at a time stirring constantly until you reach the desired thickness and consistency. Add more milk as needed. Stir in remaining ingredients and heat until completely melted. Add cheeses approximately 1/2 cup at a time until perfectly melted
- 1 -2 cups uncooked noodles
- 1 package uncooked bacon
- 2 – 3 fresh jalapenos (seeded)
- Boil noodles in salted water until done. Drain.
- Cut bacon into inch squares and cook to desired color. Drain.
- Thinly slice seeded jalapenos
- Place cooked noodles in desired pan. Add bacon and jalapenos and mix together with noodles.
- Pour cheese sauce over the noodles and mix together.
- Place in 350 degree oven for 30 minutes.

1 Package of Cream Cheese
1 Package of Bacon
Cut Jalapenos in half. Hollow out and remove seeds.
Note: it is suggested to wear rubber gloves during prep time while working with jalapenos to prevent heat reaction to hands.
Spread cream cheese to inside of each jalapeno and wrap a piece of bacon around each half.
Cook for approximately 45 minutes at 350 degree oven. Jalapeno Poppers are done when the bacon is crisp enough to your liking.
